NO RICE - CAULIFLOWER RICE
This recipe is so delicious i had to share it. It is perfect for those who are gluten free, grain free, if you want to sneak in veggies to your kids or if you are just like me ; a veggie lovers who choose to eat less grains, 90% plants and lots of fats and protein. What ever your choice is, because we are all bioindividual and one person's nourishment can be another person's poinson , this bowl is going to blow your mind and taste buds!
Makes 4-5 bowls
- 1 cauliflower head
- 1 cup scallions
- 1/3 cup finely chopped parsley
- 2 cups finely chopped kale
- 2 tbs coconut oil
- 2 tsp black sesame seeds
- 4-5 eggs ( or no egg if you want it vegan)
- 2-3 avocados
- celtic salt
- 1 lemon
- flax oil
Chop the caulifower in small pieces and pulsate in a high speed blender or food processor until it gives you the consistency of rice. Saute on medium fire the coconut oil, add scallions, cauliflower and cook for about 4 min. Add the Kale to soften, another 2 min. Salt and pepper to taste. ( if you like a little spice you could add some cumin and or turmeric too).
Turn off the fire. On the side fry some super crispy fried eggs with a soft yolk and serve in a bowl. ( or keep it vegan). Serve with half an avocado, sprinkled with a little salt, lemon juice, sesame seeds and a dash of flax oil.
