Coconut Matcha

This is one of my favorite, decadent and most delicious treat! Perfect for this winter days because it's filling, full of good fats, chewy, and super sexy!

It has the perfect balance between fats & sugar so you don't get spike in your blood sugar and the great benefits of the magic antioxidant properties of Matcha. Which I have been obsessed way before it was hip!! I used to serve this and matcha lattes at my store 5 years ago when no one else knew what matcha even was :)

Coconut Matcha

  • 1 cups of your favorite activated nutmilk ( i love it with almond or coconut)
  • 1 tsp of high quality matcha ( the brighter green the better!)
  • 1 or 2 dates or figs (dried)
  • 1 tbs almond butter
  • 1/2 cup young coconut meat

Prepare the matcha with a little bit of hot water to dissolve using a matcha whisk or my tip, is I like to put it on the nespresso frother! Then, combine the ingredients and blend on high, except the coconut milk. Once it it well blended , add the coconut milk and blend on low. The consistensy should be chewy. Enjoy !
