In the vast world of smoothies, I find this one to be perfect for nurturing our bodies and help us transition as we leave the hot summer days and enter breezy fall. I love the change of seasons, because it means we get to play with new seasonal fruits and vegetables. Pumpkins beyond giving us a fun time during Halloween carving, is loaded with pumpkin amazing nutrients. For example, a cup of pumpkin contains more than 200% of recommended daily intake of vitamin A and tons of carotenoids (think orange) that are good for the vision and the skin. It is also low on calories and it fills you up ...a lot! Which is what you need as the cooler days roll in.
This smoothie has a very unique nutty, rich flavor. It is also grounding and packed with protein.
Makes 16 oz
1.5 cups coconut water (add more if you want a thinner consistency)
1 tsp spirulina
2 tbs tahini
1 tsp vanilla
3/4 cup of shredded raw pumpkin
1/2 frozen banana
1/2 tsp cinammon
1 frozen pear
Sprinkle with hemp seeds, chia, sprouted buckwheat or any of you favorite topping for the final touch!
